Since Brass Knuckle Bistro had popular vegan items, Spice is considering adding a vegan biscuit and gravy option to her menu as well - but only in the White Center location. This means there will be seating for 50 - double what’s available in those other spots - and more room on the grill to experiment. Spice says that the space is much bigger than her other locations in Belltown, Pioneer Square, and near Pike Place Market (which continue to draw crowds). And though the three current outposts already have some vegetarian and gluten free options, the new location may also add some more vegetarian items that had dropped off the menu in the past, such as collard greens and black eyed pea hummus. It will take over the space formerly occupied by well-regarded sandwich shop, Brass Knuckle Bistro, which closed down service on April 27. Biscuit Bitch - the irreverent (and super tasty) fast casual Southern breakfast and brunch spot with three Seattle locations - is expanding to White Center.
